Abstract: The present invention discloses a method for identifying the quality of Edible Bird' s Nest (EBN) by applying a high-performance liquid chromatography coupled to TripleQuad mass spectrometry (HPLC-QQQ) to detect the content of free sialic acid in EBN in order to authenticate the quality of the EBN. The method comprises sample preparation , high-performance liquid chromatography and mass spectrometry. The method of the present invention is fast , precise , and with high sensitivity which is a desirable method to ascertain the genuinity and quality of EBN; it is relatively more objective and more scientific than traditional methods.本發明公開了一種鑑別燕窩品質的方法,是採用高效液相色譜三重串聯四級桿質譜(HPLC-QQQ)測定燕窩的游離唾液酸含量,來鑑定燕窩的品質,包括樣品處理、高效液相色譜分離和質譜檢測。本發明方法快速、準確、靈敏度高,是鑑別燕窩真假和品質優劣的好方法; 比傳統以外觀性狀鑑別更客觀,更科學。
